About Double Chocolate Quinoa Cupcakes
These double chocolate quinoa cupcakes are super healthy and delicious. They are soft, light and airy. You may have them totally guilt free as they are nutritious. These fluffy cupcakes are made with Organic Farmers Co. Quinoa flakes, oats and a bit of wholewheat flour. Cane sugar is used as the sweetener, making it a healthier snack. Chocolate comes in double role as cocoa powder and dark chocolate chunks. You may use chocolate chips instead of chopped chocolate. The black raisins used, give these cupcakes a bite in between. Ingredients
- 1/2 cup Quinoa organic farmers co flakes
- 1/2 cup Oats
- 1/4 cup whole wheat flour
- 1/2 cup Cocoa Powder
- 2 tbsp Chocolate chopped
- 2 tbsp Black Raisins optional
- 1 tsp Baking Powder and
- 1/4 tsp Baking Soda
- 1/2 tsp Salt or as per taste
- 1 / Vegetable Oil any odorless oil cup
- 2 Eggs
- 1 tsp Vanilla Essence
- 1 cup Cane Sugar
- 1/4 cup Milk

Instructions
- Take the quinoa flakes and oats in a grinder and grind to a fine powder.
- Next, in a bowl, mix together all the dry ingredients, that is, the ground quinoa oats mix, wholewheat flour, baking powder, baking soda, salt and cocoa powder. Mix well.
- Next in another bowl, beat eggs until light and creamy.
- Add in the cane sugar to this and beat again.
- Next add the vanilla essence and oil and mix well.
- Now slowly add the dry ingredients in to the wet mixture in parts, adding little milk in between.
- Meanwhile preheat the oven to 180 degree centigrade.
- Coat the black raisins with little wholewheat flour to avoid them sinking in the batter.
- Then add the black raisins and chocolate chunks into the batter and give a slight mix.
- Now grease the cupcake moulds or line them with cupcake liners.
- Scoop in 2-3 spoon fulls of the batter into the moulds (fill them only little less than 3/4).
- Bake the cupcakes for 20 minutes, until a toothpick inserted comes out clean.
- Allow to cool.
- Enjoy the chocolatey cupcakes with a cup of hot tea.
