Dahi Bhalla or Dahi vadas are my favorite. It is indeed a perfect choice of breakfast or brunch during this scorching summer heat. I had fallen in love with this flavorful snack for the first time when my aunt prepared them. Ever since I have wanted to try them. But kept postponing. So today I made up my mind to make dahi bhallas with the freshly ground Farmz2Familiez Medu Vada batter, that I recieved today. So once fried, the vadas came out unbelievably fluffy. They are then drenched in creamy, spiced curd. And finally served with a topping of green mint chutney and sweet tamarind chutney. Freshly chopped coriander leaves, a little red chili powder and chaat masala are then sprinkled on top. Luscious and melt in the mouth dahi bhallas are ready in no time.

Ingredients
- Farmz2Familiez Medu Vada batter 1 cup
- Green chili 1 finely chopped
- Ginger 1/2 inch piece finely chopped
- Salt
- Curd 1 and 3/4 cups
- Red chili powder 1 tsp
- Roasted cumin powder 1/2 tsp
- Coriander leaves 2 tbsp finely chopped
- Sweet tamarind chutney 3-4 tbsp
- Green mint chutney 3-4 tbsp
- Chaat masala 1/2 tsp
- Oil for frying the vadas
- Lukewarm water 3 cups

Instructions
- Take the batter in a bowl and whisk for 2-3 minutes.
- Add in the chopped green chili, ginger and salt and mix well.
- Heat oil in a pan.
- Add about 1 and 1/2 tbsp of batter each for the vadas.
- After sometime, flip the sides.
- Fry until they turn golden brown in color. Then place them on a tissue paper to absorb excess oil, if any.
- Then place them in the lukewarm water for about 10 minutes.
- Then squeeze each vada gently with hand to remove excess water, and then keep them aside.
- Repeat the steps of frying and soaking in water, until all the batter is used up.
- Next whisk the curd in a bowl, until all lumps are removed.
- Then add the red chili powder and roasted cumin powder and mix well.
- Place all the vadas in a bowl.
- Now pour the curd on top of them, and refrigerate until use.
- While serving, drizzle the green mint chutney, and sweet tamarind chutney.
- Then add freshly chopped coriander leaves, a little red chili powder and chaat masala on top.
- Luscious and melt in the mouth dahi bhallas are ready in no time.

Whenever i see Dahi Balla, Ma ki yaad aajati hai…everytime I go home, she will make tow things Gulab Jamun and Dahi Bhalla.
