  • 150 gm Gram black, split, urad dal
  • 1.5 tsp Salt or to taste
  • 1 tsp Baking Soda optional

  • Soak the raw rice and urad dal separately for 12 hours. Change the water once during soaking.
  • After 12 hours, combine the soaked rice and dal in a mixer grinder. Grind to a fine paste. Cover and let the batter rest overnight.
  • The next morning, add salt and baking soda (if using) to the batter. Mix well until smooth.

  • Heat a dosa pan or non-stick skillet over medium heat. Pour a ladleful of batter onto the hot pan and quickly spread it in a circular motion to create a thin dosa. This thinness is key to the crispy texture.
  • Cook for about 2 minutes, or until the edges start to curl up and the surface looks set. Drizzle a little oil around the edges and on the surface of the dosa. This helps with browning and crispness.

  • Cook for another minute, until the dosa is golden brown and crispy. Gently peel it off the pan.
  • Transfer the dosa to a plate. Serve immediately with coconut chutney.
