  • Prepare cajun spice mix with mixed herbs, garlic powder, red chilli flakes, red chilli powder, black pepper powder and salt to taste
  • Parboil potatoes for 3 whistles at medium flame
  • Prepare cajun mayonnaise with cajun spice, tomato ketchup, chopped onions, roasted cumin powder and mayonnaise and rest it for 10 to 15 minutes
  • Now press the potatoes with your palm and flatten them and don't peel off the skin. Dust the potatoes with corn flour
  • In a pan add 3 to 4 tbsp oil and heat it nicely and then add 4 to 5 potatoes at a time. Flip and fry for around 10 minutes at medium to high flame until golden brown
  • Once potatoes are nice and crisp transfer it to a serving plate and cover it with cajun mayonnaise mix, Garnish it with chopped onions and cilantro. Serveit hot and enjoy.
