About Banana & Blueberry Custard Clafoutis
Clafouti (pronounced as Klafuti) is a classic French dessert which is baked using a batter similar to a pancake batter, over fruits. The batter is baked around the fruit (cherries/ berries/ plums /saluted apples and pears) creating a light, airy, pudding-like texture inside with a mild crispy top outside. It is generally served with a dollop of fresh whipped cream or ice cream. The original French dessert uses eggs as the main ingredient. This egg free version of the same is baked using whole wheat flour & almond flour, white chia seeds, coconut sugar, banana & blueberries and is flavored with vanilla custard powder. Almonds are rich in protein and very nutritious. Coconut sugar containing all the essential vitamins and minerals is a healthy sweetener. It is further fortified with fruits and so is a healthy snack / dessert for kids and quick to bake. With the butter and the batter, it is a treat to the senses as well, to see this dessert puffing up in the oven.

Ingredients
Greasing and sprinkling
- 1½ tbsp Butter at room temperature
- 1 tbsp coconut sugar for sprinkling
Dry ingredients
- ¼ cup whole wheat flour + 1/8 cup more
- 1/8 cup almond flour
- 2½ tbsp custard powder vanilla flavored
- ¼ cup coconut sugar
- 1 pinch Salt
Wet ingredients
- ½ cup Milk
- ½ cup milk cream
- 2 tsp chia seed powder, I used white chia seeds
- 3½ tbsp Water
- 1 tsp vanilla extract
Fruits
- 2 bananas medium, sliced
- 1/4 cup blueberries dry blueberries

Instructions
- Grease a baking tray liberally with butter.
- Sprinkle coconut sugar to facilitate caramelization during the process of baking.
- Mix chia seeds powder with water and set aside.
- Take all the dry ingredients and mix together in a bowl.
- Add chia seed mixture and all the wet ingredients one by one.
- Gently mix to get a pancake batter consistency.
- Preheat oven @180 c.
- Pour 1/4th of the batter into the greased tray and bake for 10 minutes (This step is done to set the top slightly firm to arrange the fruits).
- Arrange the banana slices and the blueberries.
- Pour the remaining batter over the fruits and bake again @180 c for 40 minutes (until the Clafoutis is puffed, set like a pudding and turns golden brown around the edges).
- After 10 - 15 minutes, slice and serve the Clafoutis warm topped with ice cream of your choice or as it is.
