Ingredients & Quantity
  • 3 or 4 medium size potatoes
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp fennel/saunf powder
  • ½ tsp red chili powder
  • 1 tsp amchur powder
  • ¼ tsp dry ginger powder
  • ½ tsp chaat masala powder
  • 11/2 or 2 tbsp corn flour/corn starch
  • 1 or 2 tbsp oil for frying the tikkis
  • salt or black salt or rock salt as required
  • For Chlole 1 bowl of amritsari chole or punjabi chole/chana
  • ½ cup chopped onions
  • ¼ cup chopped coriander
  • ½ cup mint coriander chutney or coriander chutney
  • ½ cup tamarind dates chutney
  • Chaat masala as required
  • Red chili powder as required (optional)
  • Lemon juice as required (optional)
How to cook?
  1. Boil or steam the potatoes first till they are cooked till soft
  2. Peel the potatoes when they are still warm and then mash them.
  3. Add all the spice powders listed above including salt.
  4. Add the corn flour as well. Stir and mix well.
  5. Make medium round sized patties from the potato mixture.
  6. Shallow fry or pan fry till the round patties are crisp and browned.
  7. Aloo Tikki Chole
  8. Serve with chole/chickpea curry topped with both the mint-coriander chutney and tamarind-dates chutney.
  9. Aloo Tikki Chole
  10. Also add some chopped onions, chaat masala and sev.
  11. You can also add some yogurt if you want.
  12. Serve aloo tikki chole immediately.
