Lotus stem kofta curryIt is also known as kamal kakri and packed with nutritional value. Helps to reduce sugar level and control blood pressure.
Rich in fibre, good for skin, hair and promote weight loss. I'm sharing a recipe with lotus stems.

Ingredients
  

  • 200 gm lotus stems
  • 100 gm paneer cubes
  • 2 tbsp chickpea flour
  • 2 tbsp soya chunks
  • 1 teaspoon Turmeric Powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon red chilli powder
  • ½ teaspoon shahi garam masala
  • 1 cup coconut milk thin
  • 2 Bay leaves
  • Whole garam masala
  • Kasuri methi
  • Salt to taste

Instructions
 

  • Clean the lotus stems with running water. Then boil until soft, keep in room temperature.

  • Now peel off the skin and mash to make a dough.

  • Add soya chunks, chickpea flours and salt. Mix all together and give small round shape like kofta.

  • Shallow fry and keep separate. Shallow fry the paneer cubes too and keep separate.

  • Take a small bowl add turmeric powder, cumin powder, coriander powder, red chilli powder and garam masala. Make a paste with adding little water.
  • Now in the same pan add bay leaves and whole garam masala. Pour the mixed masala paste and salt.
  • Stir continuously and add thin coconut milk. Add shahi garam masala and kasuri methi. Stir continuously add fried kofta and paneer cubes.

  • Cook another 3 minutes then gravy will slowly thicker. Put off the flame. Ready to serve with chapati/ paratha/ jeera rice.
