Healthy Wheat-Nutty Pineapple Cake

Whenever I search for cake recipes it has Maida(all purpose flour) as one of the main ingredients and being a Mom, I am scared to feed maida to my tiny-tot. Hence thought to make something healthy, delicious and yet tasty. I made this cake with Wheat flour, Pineapple and walnuts and Voila !! the cake was so good that my toddler opened her mouth happily. Ingredients
- 1 cup Wheat Flour
- 1/2 cup Castor Sugar
- 1 teaspoon Cinnamon powder
- 1 teaspoon Baking powder
- 1 cup Pineapple Puree - Its better to make fresh puree
- 1/4 cup Walnut
- 1/2 cup Vegetable oil I use Rice bran oil

Instructions
- Sieve Wheat flour thoroughly to avoid any lumps and sieve castor sugar along with it.
- Add Cinnamon powder. Baking powder and fine grounded walnuts (you can chop and put them to make it crunchy )
- Add Pineapple puree and oil and fold it with spatula.
- Pre- Heat the oven at 180 degree Celsius and Cover the square baking pan(8 x 8 x 1 1/2 in.) with parchment paper and pour the batter.
- Set Microwave for 50 minutes. Let it stand for another 10 minutes before you take it out from the microwave.
Notes
- Fresh puree would always taste better than canned one, So try and make your own puree.
- I prefer fine grounded walnut powder as its easy to swallow but chopped are also fine.
