Garlic chutney is a very delicious and healthy chutney made from garlic cloves, red chillies, coconut. Garlic helps to lower cholesterol and prevents heart related diseases. Garlic is widely used for several conditions linked to the blood system and heart, including high cholesterol, coronary heart disease and hypertension. It is good to incorporate garlic in our daily diet as it has lot of health benefits. Garlic is a wonderful seasoning to add aroma, taste and nutrition to your dishes. Garlic chutney is also prepared in a dry form and this dry variety can be stored in bottles and stored upto a month. This recipe is of wet variety made with freshly grated coconut and is for immediate use.

Ingredients
  

  • Grated coconut – 1 cup
  • Whole red chillies – 7 to 8 nos.
  • Garlic cloves – 12 to 13 nos
  • Tamarind – 1 pinch
  • Ginger – 1 inch small piece optional
  • A pinch of asafoetida or hing
  • Salt
  • FOR SEASONING Cooking oil – 2 teaspoons Mustard seeds or rai – 1/2 teaspoon 6 to 7 curry leaves

Instructions
 

  • Peel the garlic cloves. Heat 1 teaspoon of oil in a pan. Add garlic cloves and roast till light brown. Remove them in a plate. Add red chillies and roast till deep red. Remove them. Then add grated coconut and roast on a low flame till dry.
  • In a mixer, add all the roasted ingredients, tamarind, ginger, asafoetida and salt. Grind with little water to a smooth paste.
  • Heat another 1 teaspoon of oil in a pan. Temper with mustard seeds and curry leaves and add it to the chutney. Mix well.
  • Serve garlic chutney with idlis or dosas.
  • NOTES/TIPS Oil your hands before peeling the garlic to prevent having garlic aroma in your hands. Soaking garlic cloves in hot water helps to peel faster.
