Rev Up Breakfast Salad

During my childhood, I did not eat much of salads. This was due to the fact that salads were not prepared on a daily basis in our household and I too did not prefer to eat these raw vegetables. However, when I was persuing my higher studies in US, I was literally surprised to see that having salads for lunch was a rage in the 21st century! Slowly, I too started adapting and developing a liking for salads. As this was the only ‘vegetarian’ meal which was easily available in most of the restaurants and food joints around New Jersey. Later during my various business visits across the globe, this developed inclination towards, salads, came to my rescue. Now I could survive on salads (and bread) alone for days, abroad…. Today morning, I was in a mood to eat salad. Thus made this healthy and tasty salad for my breakfast. Here comes the recipe for a quick, healthy and ‘nutritious’ salad!

Ingredients
  

  • 1 cup chopped cucumber
  • 1 cup tomatoes chopped
  • 1 cup capsicum chopped
  • ¼ cup apple cider vinegar
  • ¼ cup olive oil
  • ¼ teaspoon pepper powder or
  • A pinch of red chilli powder
  • 1 teaspoon coriander leaves
  • 3-4 teaspoon lime juice

Instructions
 

  • Mix in all the chopped vegetables. Add olive oil, apple cider vinegar to it and mix. Add pepper powder and chopped coriander leaves and mix well.
  • I like my salad to have a hint of spiciness. Thus included a pinch of red chilli powder. I loved its sour and delicately spicy flavor.
  • Savour this crunchy salad for breakfast or to satiate your ‘between meals’ hunger pangs.
