Brown Rice Shrimp Jambalaya (Valentines Day Dinner)
Jambalaya is dish of Louisiana, New orleans,origin of Spanish and French influence. It consists of meat , vegetable , seafood mixed with rice. This one pot meal can be good dish for valentine dinner. Easy to make , less time and a delicious dinner for your Valentine.

Ingredients
- 1 tbsp Olive Oil
- 2 cup Yellow Onion finely chopped
- 3/4 cup Bell Peppers red, green, yellow chopped
- 4 cloves Garlic minced
- 2 tsp Parsley dried
- 1/2 tsp Thyme dried
- 1/2 tsp Black Pepper Powder
- 1 tsp Cayenne Pepper red
- 1 1/2 cup Tomato diced campari
- 4 cup Chicken Broth
- 1 1/2 cup Brown Rice long grain
- 1 1/2 cup Brown Rice long grain

Instructions
- In a big pan or wok heat olive oil. Add chopped onions until translucent. Add minced garlic, cook a little bit then add chopped bell peppers until tender.
- Add diced campari tomatoes, cayenne pepper,black pepper powder,salt,thyme and parsley. cook about 4 to 5 minutes.
- Mix the brown rice and fry a little bit then add chicken stock in it. Bring to a boil then simmer the flame and cover cook for about 45 - 50 minutes until rice is tender and most of the liquid has been absorbed.
- Mix the shrimp and cover cook until the shrimp are cooked.
- Place the jambalaya into serving dish and garnish with sliced scallions.
Recipe Notes
Soak rice for 30 minutes.
