Ingredients
 

  • 1 tbsp Olive Oil
  • 2 cup Yellow Onion finely chopped
  • 3/4 cup Bell Peppers red, green, yellow chopped
  • 4 cloves Garlic minced
  • 2 tsp Parsley dried
  • 1/2 tsp Thyme dried
  • 1/2 tsp Black Pepper Powder
  • 1 tsp Cayenne Pepper red
  • 1 1/2 cup Tomato diced campari
  • 4 cup Chicken Broth
  • 1 1/2 cup Brown Rice long grain
  • 1 1/2 cup Brown Rice long grain

Instructions
 

  • In a big pan or wok heat olive oil. Add chopped onions until translucent. Add minced garlic, cook a little bit then add chopped bell peppers until tender.
  • Add diced campari tomatoes, cayenne pepper,black pepper powder,salt,thyme and parsley. cook about 4 to 5 minutes.
  • Mix the brown rice and fry a little bit then add chicken stock in it. Bring to a boil then simmer the flame and cover cook for about 45 - 50 minutes until rice is tender and most of the liquid has been absorbed.
  • Mix the shrimp and cover cook until the shrimp are cooked.
  • Place the jambalaya into serving dish and garnish with sliced scallions.

Recipe Notes

Soak rice for 30 minutes.
