Mutton Curry, goat curry or simply called lamb chops dish. Mutton curry with gravy is a treat for mutton meat lovers. This Indian main mutton dish made in rich onion tomato gravy with lots of spices infused to give a promising and delicate aroma. There are many versions of mutton curry among them, the famous Bengali version called as "Kosha Mangsho" is served during the Navratri festival. Do you know that during the British era, there was a popular mutton curry called as Railway mutton curry. Despite so many different versions, mutton curry remains a delectable dish which is loved by all. So let's get started making a simple, quick, delicious mutton curry.

- Heat ghee/ Clarified butter in the deep pan/ wok. To check if the ghee is hot, just put one cardamom and if it makes the crackling sound the ghee is ready.
- Add green cardamom and sauté it for few seconds. Add thin sliced onion and sauté it till its light brown. Do not overdo it otherwise the onion would burn. it would take 2 minutes.
- Add ginger garlic paste, sauté it along with onions. till the raw aroma of ginger-garlic paste goes off.
- Add freshly cut and cleaned lamb chops. Cook slowly on the low flame. Give a stir after 5 minutes. It should be cooked covered for 10 minutes.
- Sprinkle salt as per your taste and add the following dry spices red chili powder, cumin powder, dry ginger powder, sweet fennel powder.
- Give a nice stir for few times and let it simmer and cook covered for 5 minutes
- Add freshly prepared tomato puree, stir it and let it simmer till chops gets cooked fully and rawness of tomatoes goes away. This would take another 5-7 minutes.
- Finally to finish add garam masala, nutmeg powder, and freshly chopped coriander.
