Pohe, Kande Pohe or Poha Recipe is one of the most popular Maharashtrian recipes served during breakfast or as a evening snack prepared with pressed beaten rice, lots of onion, boiled potatoes, tempered with mustard seeds, curry leaves and asafoetida, sprinkled with lemon juice and garnished with fresh chopped coriander leaves. If you are wondering what is Poha in English called? It's basically rice which is beaten and pressed to form thin flakes and word Kande means onion so basically its onion and beaten rice recipe. Ingredients
  

  • Beaten/ Pressed rice white poha, thick – 375 grams
  • Onions chopped- 02 large
  • Salt
  • Sugar coarsely ground- 1/2 tsp.
  • Refined Oil -02 tbsp.
  • Mustard seeds- 01 tsp.
  • Asafoetida - 1 pinch
  • Curry leaves- 02 sprigs
  • Green chillies chopped- 03 nos
  • Turmeric powder -1/2 tsp.
  • Peanuts fried- 01 tbsp.
  • Cashew nuts fried- ½ tbsp.
  • Raisins fried- ½ tbsp.
  • For Sprinkling:
  • Lemon juice -02 tsp.
  • For the garnishing:
  • Fresh coriander leaves finely chopped -01 tbsp.
  • Coconut fresh, grated- ¾ th tbsp. (Optional)
  • Onion rings light golden brown- 01 tbsp. (Optional)

Instructions
 

  • Rinse the pressed rice (Poha) in a colander ensuring that it is moist and not mashed/ mushy. Let the water drain out completely and then add salt and sugar and mix lightly. Set aside.
  • Heat oil in a non-stick pan. Add mustard seeds and when they splutter / crackle add asafoetida, curry leaves. Sauté for half a minute and add chopped onions sauté till translucent.
  • Add green chillies and turmeric powder and mix. Sauté for two minutes, add dry roasted peanuts, raisins and dry roasted cashew nuts mix well.
  • Add pohe and mix lightly and cover the lid and cook till poha is heated through. Add lemon juice and mix very lightly. Serve hot garnished with chopped coriander leaves and freshly grated coconut which is optional.
  • You can garnish with crispy onion rings to enhance its flavor and appearance. Serve hot with cutting masala chai (tea)

Notes

1. A lot of people soak Poha but if you are using thin pohe (plural of Poha) then put it in colander/strainer under the running water so that it becomes moist but not mushy.
2. When poha is added to the seasoning and it apprears to be dry, sprinkle some water and give a stir. Cover the lid so that it becomes moist.

3. In the same recipe, if potatoes are mixed, it makes Batata (Potato in Marathi language) Kande Pohe. Here are two simple steps to make it –
Boil Potatoes in the pressure cooker with a 4-5 whistle or if boiling in an open pan let it boil till it is completely cooked but not mushy and let it cool down. peel them.
Cut the potatoes (also know as Batata in marathi) into cubes and add to the seasoning prepared before. Mix it gently without breaking the cubes so that it picks up the yellow colour from turmeric and mix pohe.
