Frittata is an Italian dish which is very similar to omelette. This is a baked healthy version made with pumpkin and bottle guard. Kids generally do not like eating these veges, this is the best way to feed them and they won't even know! Any vegetables can be used in the preparation.

Ingredients
- Eggs 2
- Cheddar cheese 1/4 cup
- Mozzarella cheese 1/4 cup
- Milk 1/8 cup
- Bottle guard grated 1/4 cup
- Pumpkin grated 1/4 cup
- Carrot 1/4 cup
- Onion 1 small
- Garlic 4 pods
- Olive oil 1 tablespoon
- Butter 2 tablespoon
- Mixed herbs 1 teaspoon
- Chilly flakes 1 teaspoon
- Pepper 1 teaspoon
- Salt

Instructions
- Take butter in a pan, saute onion for a minute, then add garlic.
- Then add the vegetables, salt, pepper and cook for two to three minutes.
- In a clean bowl whisk the eggs, add milk, cheese, olive oil and mix well.
- Add the sauteed vegetables(slightly cooled) to the egg mixture and mix well. Add pepper, mixed herbs, chilly flakes and salt.
- Mix everything well.
- Pour in a baking dish and bake at 180 degrees celsius for half an hour.
- Unmould and serve hot within some ketchup.
