Ingredients
  

  • For Dough:
  • Whole Wheat Flour / Atta – 1 cup
  • Salt – ¼ tsp
  • Oil – 5 tsp
  • Warm Water for kneading as required
  • For Stuffing:
  • Sprouted Matki / Moth – ½ + ¼ cup
  • Water – 1 cup
  • Oil – 2 tsp
  • Mustard Seeds / Rai – ¼ tsp
  • Red Chilli Powder / Lal Mirchi – ¼ tsp
  • Turmeric Powder / Haldi – ¼ tsp
  • Salt – ¼ tsp
  • Chopped Onions – as required
  • Chopped Tomatoes – as required
  • Chopped Coriander Leaves – as required
  • Sev – as required
  • Tamarind Chutney – as required
  • Green Chutney / Mint Chutney – as required
  • Oil for Deep Frying - as required

Instructions
 

  • In a mixing bowl, take 1 cup of Whole Wheat flour add ¼ tsp of Salt and 5 tsp of Oil and mix well and knead a hard and stiff dough using warm Water as required.
  • Cover the dough and allow the dough to rest for 30 Min.
  • In a pressure cooker, add 2 tsp of Oil, ¼ tsp of Mustard Seeds (Rai) then add sprouted Matki (Moth) and mix well.
  • Then add ¼ tsp of Red Chilli powder, ¼ tsp of Haldi Powder, ¼ tsp of Salt and 1 cup of Water and cook for only 1 whistles on medium flame.
  • After 30 Min knead the dough for another 2 Min and make small round balls and start, make 4 inches small thin Puris.
  • Give the dots all over Puris with the help of fork so that Puri does not rise up.
  • In a similar way make all the Puris and allow it to dry on cloth for four hrs.
  • After four hrs, Heat the Oil in a pan and start frying the Puris one by one.
  • Pour the Puri into the pan and with the help of spoon press and fry Puri until golden brown color from both the sides.
  • Fry the Puri on medium flame and you can use tong to flip the Puri.
  • In a similar way, fry all the Puris.
  • Now start making the Sev Puri.
  • Firstly, take one Puri and apply the Matki mixture all over Puri nicely.
  • Then add Tamarind Chutney, Green Chutney followed by some chopped Onions, Tomatoes and freshly chopped Coriander Leaves all over the Puri.
  • Lastly sprinkle some Sev all over the Puri and in a similar way make all the Sev Puris.
  • Wheat Sev Puri is now ready to serve.

Notes

Instead of sprouted Matki, you can use sprouted Green Moong also. You can make just Puris and store for 15 days. You can use Curd also over Sev Puri if you like. After preparing the Sev Puri serve it immediately else it loses its crispiness. Sev Puri taste great when you add Garlic also to spicy Green Chutney.
