Sabudana khichdi is a traditional Maharashtrian snack but other people have adapted it modifying it here and there. Here I present the traditional recipe as available in small towns of Maharashtra.

Instructions
- Wash the sago grains 2-3 times in water and add just enough water to soak it and leave it overnight. Add salt to taste.
- Boil the potato and cut into small cubes. Slit the green chillies into half.
- Heat oil in a kadai and add the cumin seeds. Let it splutter and turn brown.
- Now add the potato and green chillies and cook for 2-3 minutes till finely browned. Add salt for the potatoes.
- Now add the soaked sago grains and mix well. Cook covered for 5 minutes.
- Now crushed the roasted peanuts in a mixer and add to the mixture. Mix well and cook for another 2 minutes.
- Now add the sugar and cook for 1 minute. Garnish with fresh coriander and serve hot or topped with sev.
Notes
- Dont add too much oil or the sabudana will turn soggy.
- Dont overcook or it will turn crispy.
