Mixed Vegetable Stew is a Naga style stew prepared with mixed vegetables. It is a soul satisfying and comfort food of the Nagas. As Naga foods are mainly no spice and zero oil, this mixed vegetable stew is also a zero oil dish with vegetables, bamboo shoot juive for the flavour, slices of ginger garlic and green chillies to give a little kick of spice to the dish. A very healthy and nutritious dish. Slurrp it with hot piping steam rice.

Ingredients
  

  • 8-10 yardlong beans chopped 2-3 cms long
  • 1 potato peeled and thinly sliced
  • 6 whole ladies finger/ bhindi
  • 1 small bottlegourd thinly sliced into rounds
  • A handful of spinach
  • 2 green Chilly slit
  • 1 inch Ginger sliced
  • 3 garlic sliced
  • 1 tablespoon bamboo shoot juice
  • Salt
  • Water as required

Instructions
 

  • Clean, chop and make the vegetables ready.

  • Heat 3-4 cups of water in a pot. Add as per your requirements. Add all the ingredients leaving the spinach leaves. Season with salt.

  • Cook for 10-12 mins and add the spinach leaves and cook for 2-3 mins and take off the heat.
