Soak the rice and urad dal for 4-5 hours. Grind it together in a mixer till soft flowing batter is made. Ferment overnight.
Blend the grated coconut, green chillies, roasted chana dal and salt in a mixer. Add water as required to form a chutney. Heat oil in a small kadai and add mustard seeds, hing and curry leaves. Once they splutter, add it to the chutney.
Heat a non stick pan and pour the batter to form a dosa. Cook on both sides. Remove from the pan and stuff it with fresh pieces of alphonso mangoes. Serve with coconut chutney.
