Thankuni / Gotu kola / Mandukaparni / Centela Asiatica is a ayurvedic plant called in different names. There are number of herbs and spices may help our brain development. This is also a plant which can improve our brain health and good to insomnia. Leaves have no taste.
I made a paste of Thankuni leaves with adding green chillies and cumin seeds. You can also add garlic.
We can add 1 tsp mixed paste in any recipe. I am sharing tender pumpkin recipe with adding Thankuni leaves. If you don't like to make paste you can tear 4 to 5 leaves.
Take a pan heat oil, add carom seeds and whole red chilli. Stir for a few seconds. Add pumpkin turmeric powder, coriander powder, red chilli powder and salt. Mix evenly. Cook for until soft.
Then add roasted chana, chopped fresh coconut and thankuni paste. If you don't have thankuni paste you can also add chopped thankuni leaves. Then cook for a minute and serve with any combination.
