In a small saucepan , stir together vegetable stock, capsicum and tomatoes cube and 2 tablespoon of chia seeds and let cook it about 20 min (Makes about 2/3 cup vegetables- chia gel).
Add the rice and stir for about 30 seconds.
Add Soya sauce and Salt.
Cover and cook until rice is steaming hot and has a sticky consistency, about 4 min.
Take another pan add few drops of oil, Add the egg and cook until the desired doneness, such as Sunny Side up about 4 mins.
Serve hot Steaming Sticky Chia Brown rice with Sunny Side- Up.
Garnish with some chia seeds.
