IDEA BEHIND THE DISH: Kothimber Vadi is a popular Maharashtrian dish (Western India Dish) which is made out of cilantro leaves, chick pea flour which serves as a wonderful tea time snack or as a side dish during meals. I am giving a slight Italian twist to the popular snack dish.
For two rolls to be sliced into 16 pieces, serves 4
4bunchesParsley LeavesWashed, Picked leaving the stems and chopped
7 to 8chick pea flour large spoons
1tbsprice flour
1pinchbaking sodaoptional
2teaspoonsesame seeds
Instructions
Combine all the main ingredients together in a bowl and knead to make a firm, smooth dough.
Add little water if required and shape it into a cylindrical roll nice and tight. Prepare the steamer with water. Grease a dish of steamer
Steam the rolls in the steamer for about 15-20 minutes on high heat.
Once steamed, allow it to rest for about a minute and take it out and roll it nice and tight with a cling trip and store in freezer for an hour to allow it to set and cool.
Once cooled completely, cut the rolls into ½ inch equal slices or bite size pieces
Heat the oil for frying and fry the pieces 3- 4 at a time and fry for 2 minutes on each side. You have the option of shallow frying the same for about 10-12 minutes
Serve the fritters hot sprinkling with some roasted sesame seeds and serve with pesto or green chili chutney
