shredded cauliflower

Rajgira/Amaranth flour
2
teaspoon
Flax seed powder or 1 egg
Paneer for binding

Stir fried vegetables like cherry tomato
brocolli, capsicum
1/2
cup
cheddar cheese
Mixed herbs
red chilly flakes, salt and pepper to taste
Instructions
Wash the cauliflower and grate it. Squeeze the cauliflower in the kitchen towel, removing all of the excess moisture from the cauliflower.
In a pan, stir fry the cauliflower till dry and cooked. Spread on kitchen towel to dry.
In a bowl, mix together the cauliflower, amaranth flour, salt, paneer and flax seed to form a dough.
In a baking tray apply some oil and spread the cauliflower dough in a circle by patting it.
Preheat at 200 deg and bake for 10-15 minutes. Bake on other side too for 10 minutes if required. (I baked in convection)
Spread the tomato sauce over the crust and add the veggie toppings and cheese. Again bake till the cheese melts.
Allow it to cool a bit before serving. Sprinkle some herbs and chilly flakes and enjoy the yummy pizza.
Notes
Since this recipe is gluten free it might be difficult to form a dough, so add paneer as required for binding.
