Rajgira tikki (amaranth)
Rajgira is an amazing food for weight loss. In hindi it is called ramdana. Amaranth is high in protein and it has nutrients like calcium, iron, magnesium phosphorus and potassium. It has low calorie and it is gluten free. I made Rajgira tikki which can be served during fasting period. I soaked the seeds then made a paste with adding peanuts, green chillies, coriander leaves and rock salt.
Then mixed with boiled potatoes and boiled arbi which is perfect for navratri vrat or other fasting. Other than fasting also it can be consumed in our normal diet.
I made a coconut chutney with adding fresh coconut, peanuts, green chillies, coriander leaves, lemon juice and rock salt.
