About Peri Peri Chicken With Veggie Salad
The word Peri Peri comes from the Swahili word Pili Pili which stands for pepper/spicy chili. It is a spicy dish with roots in both Africa and Portugal. A quick and easy peri peri chicken recipe prepared with homemade peri peri sauce/marinade. This lip-smacking, delicious and succulent chicken has a spicy marinade, cooed in microwave and served with fresh crunchy Salad. You can bake/grill it in oven or can even cook it over a gas top in a tawa/pan.
This recipe is very close to my heart as it is one of my mom's favourite, she loves this spicy chicken. It is also loved by my families and friends and won many hearts. Ingredients
- 500 gm Chicken
- 1 large Red Capsicum chopped
- 5 Red Bird Eye Chilly red bird eye chilly
- 2 tbsp red chili powder or paprika paprika or
- 1 tbsp Black Pepper
- 2 tbsp Vinegar
- 1 tbsp Oregano
- 1-2 tsp Salt or as per taste
- 3-4 tbsp Oil

Instructions
- Take the chicken and make slashes on both sides. Pat them dry with kitchen towel and keep aside.
- In a blender take all the ingredients except chicken and blend it into a fine paste.
- Pour the paste over the chicken and mix well. Rub the paste all over the chicken nicely and marinate them for atleast 1 hour. The longer marination the better.
- In a grill tray lay the chicken in single layer. Microwave in combination mode (microwave+grill) for 20-25 mins. Turn them over midway every 5 mins. Rub the chicken with the left over paste in between the cooking.
- Season the fresh Veggie Salad with salt, pepper, chilly flakes and serve along with the chicken.
Recipe Notes
Adjust the chilly as per your heat preference. If one can’t source red bird eye chilli you can substitute with cayenne pepper.
For Oven Method :
Preheat oven to 180°C. In a grill tray lay the chicken in single layer and grill them for 20 mins basting the chicken with the leftover marinade in between the cooking. Turn them over midway every 5 mis. After 20 mins increase the temperature to 200°C and grill them for 5 mins each on both sides.
