  • STEP 1 Wash basmathi rice just once and rinse off the water. Keep the drained rice for 10 minutes. Heat a broad pan with 1 tb spoon of butter. Once it melts add the soaked rice into it without water and fry for few seconds in low flame gently.
  • Pour 3 1/2 cups water into it. add 1/4 tea spoon salt. Give a stir and cover it with a lid.
  • Let it cook in low flame for 15 to 20 minutes. In between open the lid and give a gentle stir without breaking the rice two times. Transfer the boiled rice to a broad plate or bowl and keep aside.
  • STEP 2 Now Heat the pan with balance butter and oil. Add Bay leaves & cumin seeds and after they splutter fry the onions adding some salt. Once they become dull fry the chopped garlic pods.
  • Now add the spices and pepper powder and stir. Add 1 tb spoon of spring onions, green chillies and saute well. Add all other vegetables and fry in medium flame for few minutes without adding water.
  • When the vegetables are half cooked check out for salt. If needed add more. Now add the boiled basmathi rice to it and mix the rice with vegetables and spices well without breaking the rice.

  • Wait till the rice mixes well with them. Garnish with the balance spring onions. Roasted cashews can be added for richness. Serve with any spicy gravy.
