About How to Make Authentic Italian Aglio Olio
In Italy, it’s quite common to eat Aglio Olio as dinner or a quick midnight snack. We cook this dish with oil, garlic, and fresh chillies. You eat this dish mainly with your friends. But there is no rule saying that it’s compulsory to do that. You can eat it with anybody. It is among the most renowned starter dishes in Italy. We have given you a set of instructions to follow to make authentic Italian Aglio Olio.

Ingredients
- 400 gm Spaghetti
- 12 to 15 cloves Garlic
- 1 to 2 Red Chillies fresh
- 7 tbsp Oil virgin olive oil is recommended
To Garnish
- Parsley finely chopped
- Parmesan Cheese

Instructions
Anybody can make Italian Aglio olio. We advise cooking the pasta first.
- Fill a large pot with water. Let the water boil. You need to put 1 liter of water and 10 g of salt for every 100 gm of pasta. Add the salt to the boiling water.
- After that, add the pasta and cook it. Keep stirring. Let the pasta cook on its own (for 10-12 minutes). Check if the pasta has become soft. Keep checking, though. You don’t want to eat overcooked pasta.
- Peel the garlic cloves and chop them up. It’s prepared for the cooking now. The middle part of the garlic is quite difficult to digest. So, it’s better to remove them before cooking.
- You can prepare the garlic while the pasta is cooking. It will save a lot of time. Even though you may be a big fan of garlic but if you put too much of it, then there will only be a garlic taste in the pasta.
- For the next step, take the fresh red chilly with you. If you do not want it to be too spicy, then remove the seeds first. Otherwise, the flavor will become really hot. And that flavour is not for everybody.
- From the traditional times, we are using fresh chilies for making Italian Aglio olio. It’s not even that hard to find these chiles. Slice them up. Do it in thin strips. The thinner it is, the better the pasta will turn out.
- Cut them in a vertical manner. If you want, you can even use dried red chilies.
- Now for the next step, take 7 tablespoons of your cooking oil. Or use virgin olive oil as recommended. Add the chopped garlic pieces to the oil.
- Cook them for about 2 minutes on a low flame. You don't want to burn the garlic. This is because if you burn the garlic, it will leave a very bitter taste that will ruin the pasta.
- If the garlic is turning golden brown, then add the fresh sliced chilies to the oil. Cook the chilies for about 3-4 minutes.
- Take care to not burn the chilies either. Or else, it creates a very strong flavour. That flavor dominates all the other ingredients in the pasta.
- Cook the pasta until it is soft. Separate the water and the pasta after the pasta gets cooked. Then add the pasta to the frying pan with chopped garlic and sliced fresh red chilies.
- Cook all the ingredients in the frying pan on high flame for cooking to infuse all the flavors.
- Aglio olio for three people is ready. Garnish the pasta with chopped parsley and parmesan cheese. Serve immediately.
Recipe Notes
- You must not store the pasta, or else it will freeze or become tasteless. And never store it in the fridge. One of the best things about this dish is that it does not need many ingredients. Still, you can cook a wonderful dish.
- Even so, the ingredients that we need are nothing exotic or difficult to find. There is no issue while looking for the ingredients.
- It’s not at all necessary to start preparing to cook the dish. Get the ingredients. And you can start whenever you want. Even if you are not a great cook, it is still possible for you to make this dish.
