This version of Christmas Fruit cake is made with 100% whole wheat flour and raw sugar and that makes it definitely a healthier choice. Ingredients
- 1/2 cup Cranberry (dried)
- 1/2 cup ½ Cup Tutti Fruity (tutti fruity)
- 1/4 cup Dates (de seeded chopped)
- 1/4 cup Figs (chopped dried)
- 1/4 cup Almonds (chopped)
- 1/4 cup Apricots (chopped)
- 1/4 cup cashews (chopped)
- 1 cup Orange Juice (or apple fresh apple juice)
- 1 tsp Orange Zest
- 1 cup Whole Wheat Flour
- cup Cane Sugar (â¾ raw)
- 1/2 cup Butter
- 1/2 tsp Cinnamon Powder
- 1/4 tsp Nutmeg (grated)
- 1/4 tsp Salt (or as per taste)
- 3/4 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1 tbsp Cocoa Powder
- 1 tbsp Vinegar
- 3/4 cup Milk
- 1/2 cup Water (hot)

Instructions
- Soak all the fruits in orange juice and orange zest in a microwave safe bowl and microwave for a minute. After this cover the bowl and keep aside for an hour
- Add butter and sugar to a mixing bowl and pour hot water over it. Mix and let it rest for few minutes
- In another bowl add milk and vinegar and mix them together, this will form buttermilk in few minutes
- Switch on the oven for preheating at 180 degrees, Add the butter milk to the previous bowl of butter, sugar & hot water.
- Sift together flour, cocoa, cinnamon powder, nutmeg powder, salt, baking powder & baking soda over this. Mix everything well, Mix the liquid & dry ingredients well and then add the soaked fruits into it and mix again
- Pour it in the prepared tin and bake in a preheated oven at 180 degrees for 25-30 minutes or until the toothpick inserted comes out clean
