Bite-size balls of fresh mozzarella, known as bocconcini, make up this great salad made with cherry tomatoes, cucumber and jalapenos.
Bocconcini is a type of cheese that is the size of an egg. This cheese is described by its Italian name which means small mouthfuls.

Ingredients
  

  • ½ cup Bocconcini sliced
  • ½ cup Cherry tomatoes halved
  • 1 cup Cucumber cubed
  • 10-12 Basil leaves
  • 10 Jalapeno sliced
  • 2 tbsp Olive oil
  • 1 tbsp Mustard Sauce
  • 1 teaspoon White Vinegar
  • 1 tbsp Mayonnaise
  • ½ teaspoon Pepper powder
  • Salt to taste

Instructions
 

  • For the dressing: In a small bowl mix together olive oil, vinegar, salt, pepper powder, mayonnaise and mustard and whisk well.
  • In a large bowl mix bocconcini, tomatoes, cucumbers, jalapeno and tear the basil leaves into 2-4 pieces.
  • Add the dressing to the salad just before you serve.

Notes

  • For best results use European cucumbers.
  • Any soft cheese can be used in this recipe.
