Ingredients
  

  • Eggplant medium size - 8 nos
  • Garlic Cloves- 4 or 5
  • Cumin seeds - 1 teaspoon
  • Red chilli powder - 2 teaspoon
  • Salt
  • Oil - 2 tablespoon

Instructions
 

  • Grind the garlic cloves, salt and red chilli powder in a mixer for a second.Ensure that the mix is slightly coarse.
  • Transfer this into a bowl. Then add the cumin seeds to this mixture. Mix this well.
  • Now wash the eggplants and slit them diagonally. Keep them in salt water until use.
  • Then stuff the eggplants with the prepared mixture.
  • Heat oil in a pan. Once the oil is hot, add the stuffed eggplants. Saute them carefully. Then cover it with a lid and allow it to cook for 5 to 7 minutes or until the eggplants turn tender.
  • Now switch off the flame and transfer the cooked eggplant recipe into a serving plate.

Notes

You can also opt stalk intact Eggplants. 
This dish consumes very little amount of cooking oil which makes it healthy smile
