Mango Rice | Mavinakayi Chitranna

Mavinakayi Chitranna, is a Karnataka or South indian delicacy and is prepared with Rice with a hint of tangy and spice. During summer or Mango season this is the best morning breakfast or lunchbox.

Instructions
In a cooking pan take 2 tablespoon of Oil and allow it to heat.
To that, add ½ tsp of Mustard Seeds (Rai), ¼ tsp of Cumin Seeds (Jeera), ¼ tsp of Hing, 2 tablespoon of Peanuts and
roast
for 2 Min.
Then add 1 small dry Red Chilli, 2 tablespoon of Curry Leaves, few slit green Chillies and mix well.
Furthermore, add ½ tsp of Turmeric (Haldi) powder, 1 cup of peeled and grated Raw Mango and stir for 4 to 5 Min.
Then add cooked Rice, ½ tsp of Salt, 2 tsp of Desiccated Coconut, ¼ cup of chopped Coriander Leaves and mix well.
Toss the Rice nicely until all the Mango stuffing is coated to Rice.
Mango Rice is now ready to serve.
