Brinjal with green chana/ hare chane ka baingan
This is a seasonal recipe, when we get green chana we can try this healthy recipe. I tried with very little oil and less spices. Finally it gives a good taste and may be appreciated.
Roughly crush the green chana and mash the boiled potatoes.
Heat mustard oil add chopped garlic and green chillies. Add poppy seeds, chopped spring onion and crushed green chana.
Stir for a few minutes add salt, mashed potatoes, garam masala and chopped cashew nuts.
Dry roast the brinjal then scoop a little portion. Mix with cooked chana and coriander leaves. Shallow fry the roasted brinjal with little oil and salt.
Now fill the brinjal with cooked chana. Again shallow fry both sides and serve with any combination.
