Peel the potatoes, onions & bitter gourd (karela) wash and & thinly slice them. Finely chop the green chili's as well.
In a bowl take the sliced bitter gourd pcs and add salt and boil for 15 mins. Squeeze out all the water, wash the karela in running water and keep it aside.
Heat oil in a pan or kadhai and add cumin seed, chopped chili's, ginger & onions and fry till they become light brown.
Add the potatoes and fry them till they become light brown.
Add Turmeric powder, Sabzi & Garam Masala and mix well. Salt to taste
Then add finely boiled & chopped bitter gourd (karela) mix well and cover the pan with a lid. Keep the flame low and let it cook till the potatoes, Karela is done. This will take approximately 15-20 minutes.
Serve hot with chapati( Indian Flat Bread).
Notes
Peel the bittergourd from outside and remove the seeds and boil them so as to remove the bitterness of Bitter Gourd.
