Place fresh orange juice, sugar, mustard powder, and salt into the bowl of a blender.
Cover, and puree on high until smooth. Reduce blender speed to medium-low; slowly pour in the extra virgin olive oil and blend until incorporated and the dressing is creamy.
Take a pan and put on high flame and roasted the flax seeds and set aside for cool.
To serve, toss the iceberg lettuce leaves in a large bowl with the Mandarin oranges, and other cut fruits and mix with dressing nicely. Place onto salad plates and sprinkle with toasted flax seeds.
