Madeleines are very small sponge cakes with a distinctive shell-like shape. Here it is made healthy, by replacing the maida by cocoa powder, almond meal, and whole wheat flour.They are eggless too.
Preheat oven to 180 degrees. Lightly grease the Madeleine cookie mould.
In a bowl whisk cornflour and water until a smooth mixture. Add vanilla and almond essence and mix. Add sugar and whisk.
Stir in almond meal, cocoa powder, whole wheat flour, baking powder till well combined.
Add melted butter and mix until smooth batter if formed.
Drop the batter into each mould.
Bake for 10-12 minutes.
Cool it and then unmould it.
Place on the plate with shell side up. Dust with icing sugar.
Serve with a warm cuppa of coffee/ tea.
