About Chocolate Madeleine

Madeleines are very small sponge cakes with a distinctive shell-like shape. Here it is made healthy, by replacing the maida by cocoa powder, almond meal, and whole wheat flour.They are eggless too.

  • Preheat oven to 180 degrees. Lightly grease the Madeleine cookie mould.
  • In a bowl whisk cornflour and water until a smooth mixture. Add vanilla and almond essence and mix. Add sugar and whisk. Stir in almond meal, cocoa powder, whole wheat flour, baking powder till well combined.
  • Add melted butter and mix until smooth batter if formed. Drop the batter into each mould.
  • Bake for 10-12 minutes. Cool it and then unmould it.
  • Place on the plate with shell side up. Dust with icing sugar. Serve with a warm cuppa of coffee/ tea.
