My mother makes a unique snack, ‘cabbage garilu’. In Telugu language, ‘vadas’ are called ‘garilu’. Each time she visits me, she makes a wonderful dish and brings it over, as she knows, I love to taste varied vegetarian dishes, especially snacks. Moms are indeed adorable!
The softness of urad dal combined with cabbage and onions, renders a unique taste to this dish. These cabbage ‘vadas’ are very tasty and one cannot stop at having just a vada or two... These vadas are easy to make.
Soak urad dal in water for minimum 3 hours. If it is soaked for more time, it would be better.
Drain the urad dal completely and grind to a paste. Do not add water. It should form a thick paste. The paste should not be runny.
Add to this chopped onion, cabbage, chillies, curry leaves, chilli powder and salt. Mix well.
Heat oil in a pan/kadhai. Grease you palm with oil/water. Shape the above batter, in circular form of vadas with your palms and fry in oil.
Savor these vadas either plain or with your favorite chutney or tomato sauce.
I had these with (sesame seeds) chutney.
Notes
Do not over fry the vadas. Just before the vadas start turning dark brown, remove from the oil and drain on absorbent paper.
