Bhindi/ okra 250gm
Onion chopped in slices 1 medium size
Kuti Kali Mirch / thick ground black pepper 1/2 tsp
Green chilli 1-2
Heeng/ Asafoetida 1/4th tsp
Jeera/ Cumin seeds 1/4 th tsp
Dhania powder / Coriander powder 1/4 tsp
Tamarind pulp 1/4 th lemon size
Oil 1 tbsp

Instructions
Wash & pat dry bhindi.Cut into 1/2 inch size round pieces.
Heat a wok. Add oil. Once the oil is heated add asafoetida & cumin seeds. Add green chili let it splutter.
Add round cut bhindi & cook on high flame for 2 min. Slowly turn bhindi upside down & cook for 1 min. This step is to remove the stickiness in bhindi
Now add sliced onions Kali Mirchi dhania powder tamarind & salt. Stir & cook covered on slow flame for 6-7 min.After that slowly turn bhindi upside down.
Cook for 3 min fry for 2 min uncovered on high flame & it's done
Notes
If you like to make this crispy you can increase oil and after it is cooked you can stir fry it for a while.
We don’t Stir bhindi too much as seeds come out & it does not taste good.
If you are using less oil like in my recipe always cook on slow flame.
