How to make eggless peanut butter cookie dough - Sift dry ingredients viz - all purpose flour, baking powder, baking soda and salt in a medium-sized bowl. Mix in all until well blended.
Bring the butter at room temperature, in case its frozen, Using an electric beater, beat butter at a low speed for 30 seconds.
Add granulated white sugar and light brown sugar. Cream together sugars and butter on the high speed for 1 to 2 minutes until it turns fluffy and creamy and is completely combined.
Mix in peanut butter and vanilla essence. Stir until smooth.
Combine the flour mixture to the above butter mixture. Mix well using a spatula and refrigerate the cookie dough for 30 minutes to 60 minutes.Preheat oven at 160 centigrade, Align a parchment sheet on a baking tray.
Make small balls out of the peanut butter cookie dough, place them on the prepared baking tray.Using a fork make a criss-cross design and sprinkle some finely chopped roasted peanuts.
Bake at 160 centigrade for 13 – 15 minutes. Leave the baked cookies for few minutes on the baking tray and place them to a cooling rack.
Storage of these no egg cookies - Transfer to an airtight container once the cookies are completely cooled down.
