Susroot is a special flatbread recipe of Kashmiri Dogra community. When the daughters of this community get married, this sweet flatbread delicacy Susroot, is sent across in a big 'Thaal' to inlaws, along with many other delicacies.
In a bowl mix maida, sugar and Fennel seeds. Mix in dessicated coconut and dry ginger powder. Add soaked raisins. Mix in powdered cashews and almonds.
Rub this mixture with your palms, so that heat generated with friction of palms, melts the sugar. Add water gradually and knead a stiff dough.
If the dough kneaded soft, the sugar in it would loosen it further and it would be difficult to cook it. Cover the dough and keep it aside for 10 minutes.
Smear hands with ghee and roll the dough thick in round disc. Shape it with round cookie cutter Nd remove the excess dough.
Place the coconut pieces( cut in to length wise) in crisscross,on round Susroot.In a wide pan shallow fry it down side. Keep pouring hot ghee over Susroot with ladle. It will take 5 to 7 minutes. Once it's golden brown on down side, flip it slowly.
Cook on slow flame for 2 minutes and remove it on kitchen towel/ tissue paper.
Cool it a bit and place coins in round shape in corners of Susroot.
store Susroot in airtight container.
