In a bowl combine the flour, salt, 2 tsp oil and kalonji.
Rub the flour well in between the palms to incorporate the oil well. Mix nicely and add water little by little at a time and knead it into a fine dough.
Now take medium size portions of the dough and roll to balls. Take the balls and flatten it and make thin poori with the help of a rolling pin.
With a fork prick all over, this is to avoid fluffing up in oil, fold it again prick and fold it to make a triangle shape. Make ready this way all the remaining balls.
Now heat oil in a pan. Drop the Nimki in batches and fry in low-medium heat till all side turn golden and crisp which will take around 10 mins or so.
Do not fry in high heat or it will uncooked inside. Drain in absorbent paper and store in air tight container.
