Ingredients
- Maida 1 cup
- Kalonji 2 tsp
- Water as required for making the dough
- Oil 2 cups

Instructions
- In a bowl combine the flour, salt, 2 tsp oil and kalonji.
- Rub the flour well in between the palms to incorporate the oil well. Mix nicely and add water little by little at a time and knead it into a fine dough.
- Now take medium size portions of the dough and roll to balls. Take the balls and flatten it and make thin poori with the help of a rolling pin.
- With a fork prick all over, this is to avoid fluffing up in oil, fold it again prick and fold it to make a triangle shape. Make ready this way all the remaining balls.
- Now heat oil in a pan. Drop the Nimki in batches and fry in low-medium heat till all side turn golden and crisp which will take around 10 mins or so.
- Do not fry in high heat or it will uncooked inside. Drain in absorbent paper and store in air tight container.
