Instructions
Heat oil in a pan. Add cumin seeds and mustard seeds and let it crackle.
Add chopped onion and saute till it turns soft. Add chopped tomatoes and saute till it turns mushy.
Add the Masala spice powders and saute for a min.
Add sliced potatoes and cook for about 10 mins stirring it occasionally on low heat.
Add sliced brinjal, mix well, cover the pan and cook till the potatoes and brinjal is cooked completely.
