Ingredients
- 2 potato
- 150 gm brinjal
- 2 tablespoon oil
- 1 onion large , chopped
- 1/2 teaspoon turmeric powder
- 1/2 coriander powder
- 1/2 teaspoon cumin seed
- 1/2 teaspoon mustard seeds
- 1 teaspoon chili powder
- 1 to mato chopped
- Salt to taste

Instructions
- Heat oil in a pan. Add cumin seeds and mustard seeds and let it crackle.
- Add chopped onion and saute till it turns soft. Add chopped tomatoes and saute till it turns mushy.
- Add the Masala spice powders and saute for a min.
- Add sliced potatoes and cook for about 10 mins stirring it occasionally on low heat.
- Add sliced brinjal, mix well, cover the pan and cook till the potatoes and brinjal is cooked completely.
