Ingredients
  

  • 2 potato
  • 150 gm brinjal
  • 2 tbsp oil
  • 1 onion large , chopped
  • 1/2 tsp turmeric powder
  • 1/2 coriander powder
  • 1/2 tsp cumin seeds
  • 1/2 tsp mustard seeds
  • 1 tsp chili powder
  • 1 to mato chopped
  • Salt to taste

Instructions
 

  • Heat oil in a pan. Add cumin seeds and mustard seeds and let it crackle.
  • Add chopped onion and saute till it turns soft. Add chopped tomatoes and saute till it turns mushy.
  • Add the Masala spice powders and saute for a min.
  • Add sliced potatoes and cook for about 10 mins stirring it occasionally on low heat.
  • Add sliced brinjal, mix well, cover the pan and cook till the potatoes and brinjal is cooked completely.
