Arbi or the colocasia root makes for a delicious fried vegetable. It is usually served with sambar and plain rice in Tamil households.

Arbi or colocasia root - 6-7
Turmeric powder - 1/2 tsp
Red chilli powder - 1 tsp
Salt
Oil - 4 tsp
Mustard seeds - 1 tsp
Hing - 1/2 tsp
Curry leaves - 1 sprig
Instructions
Pressure cook the colocasia root for 10 -15 minutes. Once it cools, peel and cut into roundels.
Heat oil in a kadai and mustard seeds. Add the hing and curry leaves.
Now add the colocasia pieces and mix well. Add turmeric powder, red chilli powder and salt.
Cook on high flame for 5 minutes. Now lower the flame and cook for another 8-10 minutes.
Enjoy with sambar and hot rice.
Notes
Do not over cook the colocasi or mash them.
