Poha
beaten rice - 1 cup washed and kept aside
Mustard seeds- 1 tsp
Peanuts - 2 tsp
Green chillies - 2
Spring onion - a small bunch
Tomato - 1 small cubed
Capsicum - 1/2 cubed
Potato - 1 boiled and cubed
Turmeric powder - 1/2 tsp
Red chilli powder - 1/2 tsp
Salt
Sugar - 1 tsp
Chopped coriander and pomegranate seeds to garnish
Oil - 4 tsp
Instructions
Heat oil in a pan and add mustard seeds. After they splutter, add chopped onions and peanuts and let it brown slightly.
Now add the green chillies and all the veggies. Cook for 2-3 minutes after adding salt to taste.
Now add the washed poha and mix. Add the spices and sugar and mix well. Cook covered for 5 minutes.
Garnish with chopped coriander and pomegranate seeds. Serve hot.
