Ingredients
- Poha beaten rice - 1 cup washed and kept aside
- Mustard seeds- 1 tsp
- Peanuts - 2 tsp
- Green chillies - 2
- Spring onion - a small bunch
- Tomato - 1 small cubed
- Capsicum - 1/2 cubed
- Potato - 1 boiled and cubed
- Turmeric powder - 1/2 tsp
- Red chilli powder - 1/2 tsp
- Salt
- Sugar - 1 tsp
- Chopped coriander and pomegranate seeds to garnish
- Oil - 4 tsp

Instructions
- Heat oil in a pan and add mustard seeds. After they splutter, add chopped onions and peanuts and let it brown slightly.
- Now add the green chillies and all the veggies. Cook for 2-3 minutes after adding salt to taste.
- Now add the washed poha and mix. Add the spices and sugar and mix well. Cook covered for 5 minutes.
- Garnish with chopped coriander and pomegranate seeds. Serve hot.
