Vegetable Poha

Vegetable poha is a fulfilling and healthy start to the day. The iron in the poha and vitamins and minerals of the veggies surely fulfill your dietary requirements.

  • Poha beaten rice - 1 cup washed and kept aside
  • Mustard seeds- 1 tsp
  • Peanuts - 2 tsp
  • Green chillies - 2
  • Spring onion - a small bunch
  • Tomato - 1 small cubed
  • Capsicum - 1/2 cubed
  • Potato - 1 boiled and cubed
  • Turmeric powder - 1/2 tsp
  • Red chilli powder - 1/2 tsp
  • Salt
  • Sugar - 1 tsp
  • Chopped coriander and pomegranate seeds to garnish
  • Oil - 4 tsp


  • Heat oil in a pan and add mustard seeds. After they splutter, add chopped onions and peanuts and let it brown slightly.
  • Now add the green chillies and all the veggies. Cook for 2-3 minutes after adding salt to taste.
  • Now add the washed poha and mix. Add the spices and sugar and mix well. Cook covered for 5 minutes.
  • Garnish with chopped coriander and pomegranate seeds. Serve hot.
