Adai is made using batter prepared with lentils, rice and spices. This traditional and healthy adai is given a makeover, as Carrot Adai Bites. Each bite-sized Adai is an ideal snack option as well a complete breakfast option. This recipe is sure to attract kids due to its cute size. HomeChef Rajeswari Annamalai has used Farmz2Familiez Adai batter in this recipe. It is a wonderful blend of lentils, rice and spices.
Grated carrot is added to the adai batter to make it even healthier and the batter is flavoured with roasted fennel seeds and garlic. These adai bites make a perfect appetizer as well when topped with tomato-mint-cashew chutney spread and crunchy omapodi(‘Ajwain’[Carom seeds] and ‘Besan’[Chickpea flour] crisps). How to make Roasted Fennel seeds and Garlic spice powder:
Dry roast all the ingredients separately as mentioned under "ingredients for Roasted Fennel seeds and Garlic spice powder" and allow them to cool completely.
Blend the roasted ingredients to a coarse powder.
How to make Tomato-Mint-Cashew chutney spread:
Heat oil in a pan and add the cashew nuts. Saute until they turn slightly brown.
Turn off the flame and allow this mixture to cool completely.
Add salt to the cooled mixture and blend it to a smooth paste without adding water.
How to make Carrot Adai Bites:
Add grated carrot, roasted fennel seeds & garlic spice, water and salt to the Farmz2Familiez Adai batter.
Mix well. The batter consistency should be thick and not watery. Heat a dosa tawa.
Using a small ladle pour a ladle full of batter on the preheated tawa, starting from the sides and ending in the center.
Smear oil on all these bit- sized adais.
Cook for 2 – 3 minutes until the edges start loosening a bit.
Flip them carefully, smear oil again and allow them to cook.
Once they are completely cooked on both the sides, transfer them to a hot casserole.
Repeat the same for the remaining batter.
Serving:
Place the bite-sized adais on a serving plate.
Apply a generous amount of the chutney spread.
Sprinkle omapodi and place a halved cashew nut on each bite sized adai.
Serve immediately.
