Ingredients

carom seeds
spinach puree as required to knead the dough
oil to deep fry
Instructions
mix flour, salt, carom seeds and oil in a bowl
add spinach puree little by little and prepare a stiff dough
cover the dough and keep aside for 15 minutes
knead the dough again after 15 minutes
pinch lemon sized balls from the dough
take a ball and roll into a thin round chapati using rolling pin
cut this chapati into a rectangular sheet
make slits on the sheet leaving some space on the edges
fold the sheet in half, you can put little water at the edges
fold again in half as shown in the image
take one of the sides and fold in reverse through the middle of layers
mathri is ready
make all in the same way
heat oil in a kadai
when oil becomes hot, reduce the flame to low
now add the mathris and fry until crispy
remove the mathris from oil and drain on the absorbent paper
serve or store in an air tight container after it becomes cool
