Ingredients
 

  • 1 cup All Purpose Flour
  • 1.5 tbsp Oil
  • 1-2 tsp Salt or as per taste
  • 1/4 tsp Carom Seeds
  • to Spinach or puree, or dough puree as required knead the dough
  • to Oil deep fry

Instructions
 

  • mix flour, salt, carom seeds and oil in a bowl
  • add spinach puree little by little and prepare a stiff dough
  • cover the dough and keep aside for 15 minutes
  • knead the dough again after 15 minutes
  • pinch lemon sized balls from the dough
  • take a ball and roll into a thin round chapati using rolling pin
  • cut this chapati into a rectangular sheet

  • make slits on the sheet leaving some space on the edges

  • fold the sheet in half, you can put little water at the edges

  • fold again in half as shown in the image

  • take one of the sides and fold in reverse through the middle of layers

  • mathri is ready

  • make all in the same way

  • heat oil in a kadai
  • when oil becomes hot, reduce the flame to low
  • now add the mathris and fry until crispy
  • remove the mathris from oil and drain on the absorbent paper
  • serve or store in an air tight container after it becomes cool
