Leaf Mathri
Ingredients
- 1 cup All Purpose Flour
- 1.5 tbsp Oil
- 1-2 tsp Salt or as per taste
- 1/4 tsp Carom Seeds
- to Spinach or puree, or dough puree as required knead the dough
- to Oil deep fry

Instructions
- mix flour, salt, carom seeds and oil in a bowl
- add spinach puree little by little and prepare a stiff dough
- cover the dough and keep aside for 15 minutes
- knead the dough again after 15 minutes
- pinch lemon sized balls from the dough
- take a ball and roll into a thin round chapati using rolling pin
- cut this chapati into a rectangular sheet
- make slits on the sheet leaving some space on the edges
- fold the sheet in half, you can put little water at the edges
- fold again in half as shown in the image
- take one of the sides and fold in reverse through the middle of layers
- mathri is ready
- make all in the same way
- heat oil in a kadai
- when oil becomes hot, reduce the flame to low
- now add the mathris and fry until crispy
- remove the mathris from oil and drain on the absorbent paper
- serve or store in an air tight container after it becomes cool
