This is an easy Grilled chicken recipe. All you need is some Licious Chicken breasts, marinated with easily available spices and cook it in an oven. Overall this recipe just uses 3 tbsp of Extra virgin olive oil and some veggies to boost your health quotient and add that crunchy texture to the overall dish.

For the marinade :
Wash the chicken pieces under running water
To the chicken pieces - add Lime juice, hung curd, kasuri methi
Next add dry spice powders - chilli, coriander, turmeric & garam masala. A pinch of salt.
Mix well and let it marinade overnight/min 1hr in a refrigerator
In a wok - add 1 tbsp olive and saute the veggies - carrots, babycorn, boy choy and mushrooms. Add soy sauce, white vinegar, 1/2 tsp sugar, salt to taste and some crushed schezwan pepper. Do not overcook as the veggies will need to retain their crunc
Pre heat oven to 180C for 10mins
Grease your grill pan with olive oil and place the chicken pieces. Drizzle some more oil on top of the pieces as well
Cook the chicken pieces for 15-20mins until it is well cooked. You may either serve them as a whole or slice them up like I did into bite size portions
Dish out hot and serve with the sauteed veggies for a whole some healthy meal :)
